Description

A delicious and easy-to-make casserole with layers of nacho cheese Doritos, seasoned ground meat, black beans, corn, and gooey melted cheese.


Ingredients

  • 1 bag Nacho Cheese Doritos
  • 1 pound ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheese (cheddar or a blend)
  • 1/2 cup sour cream
  • Optional: chopped green onions, jalapeños, or cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  3. Stir in the taco seasoning, black beans, corn, and salsa. Cook until heated through.
  4. In a baking dish, layer half of the Nacho Cheese Doritos at the bottom. Spread half of the meat mixture over the Doritos, followed by half of the cheese.
  5. Repeat the layers with the remaining Doritos, meat mixture, and cheese.
  6. Top with dollops of sour cream.
  7. Bake for 20-25 minutes until the cheese is melted and bubbly.
  8. Garnish with green onions, jalapeños, or cilantro if desired.
  9. Serve warm and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Can be frozen for up to 2 months.
