Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup room-temperature milk
  • 1 can Rotel, undrained
  • 2 cups freshly shredded cheddar cheese
  • 1 cup sour cream
  • Hot sauce, to taste
  • Salt and black pepper, to taste
  • 10 flour tortillas
  • Diced tomatoes, for garnish
  • Chopped cilantro, for garnish

Instructions

  1. Heat the olive oil in a large skillet or pot over medium heat. Add the diced onion and sauté until translucent, about 3 minutes.
  2. Add the ground beef to the skillet, sprinkling it with the taco seasoning. Cook until the beef is fully browned and crumbly, then drain excess grease and set aside.
  3. Melt the butter in the same pan over medium heat, then whisk in the flour, cooking for 1–2 minutes. Gradually pour in the milk, whisking until smooth and slightly thickened.
  4. Stir in the undrained Rotel, then lower the heat and add in the cheddar cheese, stirring until creamy.
  5. Incorporate the sour cream and optional hot sauce, seasoning with salt and black pepper. Mix the cooked beef and onions back into the cheesy Rotel sauce, allowing it to simmer on low for 8–10 minutes.
  6. Warm the tortillas in a dry skillet or microwave until soft, then spoon the cheesy beef mixture into each tortilla, garnishing with diced tomatoes and chopped cilantro.
