  • 1 pound ground beef or turkey
  • 1 jar (24 oz) marinara sauce
  • 2 cloves garlic, minced

  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds. Drizzle the inside with olive oil and sprinkle with salt and pepper. Place the squash cut side down on a baking sheet and roast for 30-40 minutes until tender.
  2. In a skillet over medium heat, cook the ground beef or turkey until browned, breaking it up with a spoon as it cooks. Drain any excess fat to keep the dish light and healthy.
  3. Add the minced garlic and dried herbs to the meat in the skillet. Sauté for about 1 minute until fragrant, ensuring the garlic doesn’t burn.
  4. Stir in the marinara sauce and let it simmer for 10 minutes, allowing the flavors to meld beautifully.
  5. Once the spaghetti squash is cooked, use a fork to scrape the insides and create long, spaghetti-like strands.
  6. Toss the spaghetti squash strands with the meat sauce and half of the mozzarella cheese, mixing well to combine all the flavors.
  7. Transfer the mixture to a baking dish, topping it with the remaining mozzarella cheese. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
