- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 8 oz spaghetti
- 3 cloves fresh garlic, minced
- 8 oz cream cheese
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup low-sodium chicken broth
- 2 tbsp olive oil
- 1 tsp dried Italian herbs
- Salt and pepper to taste
Instructions
- Preheat oven to 350°F (175°C) and prepare a baking dish with nonstick spray.
- Dice chicken breasts into bite-sized pieces. In a skillet over medium heat, add olive oil and sauté chicken until golden brown, about 5-7 minutes. Season with salt, pepper, and dried Italian herbs.
- Boil the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- In the same skillet, lower the heat and add minced garlic, sautéing until fragrant. Mix in cream cheese and half of the shredded cheeses until melted and combined. Stir in reserved pasta water to adjust sauce consistency. Add drained spaghetti and chicken mixture, stirring well.
- Transfer the mixture to the baking dish, top with remaining cheese, and bake for about 20 minutes until bubbly and golden.
Notes
This dish can be prepared ahead of time and refrigerated unbaked for up to 24 hours. It also freezes well for up to 3 months. Experiment with different cheeses or add vegetables for extra nutrition.
