Ingredients

- 2 cups cooked chicken, shredded
- 1 cup uncooked rice
- 2 cups chicken broth
- 1 can cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 cup frozen mixed vegetables
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine cooked chicken, uncooked rice, chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
- Stir in frozen mixed vegetables and half of the shredded cheddar cheese. Pour into a greased 9×13 inch baking dish and cover with aluminum foil. Bake for 45 minutes.
- Remove the foil, sprinkle remaining cheddar cheese on top, and bake uncovered for an additional 15-20 minutes until the cheese is bubbly.
- Let it cool for a few minutes before serving.
Notes
Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Use leftover chicken or adjust spices for a personal touch.
