A hearty and delicious casserole combining tender chicken, creamy sauce, and cheesy goodness with fluffy rice and vibrant vegetables.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked chicken, uncooked rice, chicken broth, cream of chicken soup, garlic powder, onion powder, salt, and pepper. Stir until well mixed.
  3. Stir in frozen mixed vegetables and half of the shredded cheddar cheese. Pour into a greased 9×13 inch baking dish and cover with aluminum foil. Bake for 45 minutes.
  4. Remove the foil, sprinkle remaining cheddar cheese on top, and bake uncovered for an additional 15-20 minutes until the cheese is bubbly.
  5. Let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months. Use leftover chicken or adjust spices for a personal touch.
