A comforting and delicious soup delivering rich flavor without the heaviness of cream, packed with broccoli and melty cheddar.
Ingredients

- 2 cups broccoli florets
- 1 cup sharp cheddar cheese, shredded
- 1 medium onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk or milk alternative
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent and fragrant, about 3-5 minutes.
- Add the broccoli florets and pour in the vegetable broth. Stir to combine and bring to a gentle simmer.
- Let the soup simmer for about 10-15 minutes, or until the broccoli is tender and bright green.
- Remove from heat and use an immersion blender to puree until smooth. If using a regular blender, blend in batches. Return to low heat, stir in milk and cheddar until melted. Season with salt and pepper. Serve hot.
Notes
For a richer flavor, consider adding nutritional yeast or mustard. Adjust thickness by adding more or less broth, and feel free to experiment with different cheeses.
