Cheesy Broccoli Cheddar Soup No Cream

Description

A comforting and delicious soup delivering rich flavor without the heaviness of cream, packed with broccoli and melty cheddar.


Ingredients

  • 2 cups broccoli florets
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk or milk alternative
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent and fragrant, about 3-5 minutes.
  2. Add the broccoli florets and pour in the vegetable broth. Stir to combine and bring to a gentle simmer.
  3. Let the soup simmer for about 10-15 minutes, or until the broccoli is tender and bright green.
  4. Remove from heat and use an immersion blender to puree until smooth. If using a regular blender, blend in batches. Return to low heat, stir in milk and cheddar until melted. Season with salt and pepper. Serve hot.

Notes

For a richer flavor, consider adding nutritional yeast or mustard. Adjust thickness by adding more or less broth, and feel free to experiment with different cheeses.
