Ingredients

Scale
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
  2. Steam the broccoli florets until they are tender, which usually takes about 5–7 minutes, then finely chop the broccoli.
  3. In a large mixing bowl, combine the finely chopped broccoli with cheddar cheese, breadcrumbs, grated Parmesan cheese, eggs, garlic powder, and a good pinch of salt and pepper. Mix until well combined.
  4. Form the mixture into small bites and place them on the prepared baking sheet. Lightly spray with olive oil and bake for 20-25 minutes until golden brown and crispy.
  5. Serve the bites warm for maximum cheesy goodness!

Notes

Pair with marinara or ranch dressing for dipping. Leftovers can be stored in an airtight container for up to 3 days and reheated at 350°F (175°C) for 10 minutes.
