- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 large eggs
- 1 tsp garlic powder
- Salt and pepper to taste
- Olive oil spray
Instructions
- Preheat the oven to 375°F (190°C) and prepare a baking sheet with parchment paper.
- Steam the broccoli florets until they are tender, which usually takes about 5–7 minutes, then finely chop the broccoli.
- In a large mixing bowl, combine the finely chopped broccoli with cheddar cheese, breadcrumbs, grated Parmesan cheese, eggs, garlic powder, and a good pinch of salt and pepper. Mix until well combined.
- Form the mixture into small bites and place them on the prepared baking sheet. Lightly spray with olive oil and bake for 20-25 minutes until golden brown and crispy.
- Serve the bites warm for maximum cheesy goodness!
Notes
Pair with marinara or ranch dressing for dipping. Leftovers can be stored in an airtight container for up to 3 days and reheated at 350°F (175°C) for 10 minutes.
