- 1 cup all-purpose flour
- 1 cup rolled oats
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1/2 tsp ground cloves
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C). In a medium mixing bowl, whisk together flour, rolled oats, baking soda, cinnamon, ginger, cloves, and salt; set aside.
- In a separate large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla, mixing until just combined.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Scoop tablespoonfuls of dough onto a parchment-lined baking sheet.
- Bake for 10-12 minutes, or until golden brown around the edges. Let cool on a wire rack.
- For the filling, beat cream cheese and powdered sugar until smooth. Spread filling on the bottom of a cookie and sandwich with another cookie.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. They can also be frozen for up to 3 months.
