Description

Chai Oatmeal Cream Pies are a delightful twist on traditional oatmeal cookies infused with warm spices and creamy sweetness, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). In a medium mixing bowl, whisk together flour, rolled oats, baking soda, cinnamon, ginger, cloves, and salt; set aside.
  2. In a separate large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy. Add egg and vanilla, mixing until just combined.
  3. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Scoop tablespoonfuls of dough onto a parchment-lined baking sheet.
  4. Bake for 10-12 minutes, or until golden brown around the edges. Let cool on a wire rack.
  5. For the filling, beat cream cheese and powdered sugar until smooth. Spread filling on the bottom of a cookie and sandwich with another cookie.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days. They can also be frozen for up to 3 months.
