Description

A vibrant and flavorful dish featuring tender salmon fillets and colorful vegetables simmered in a rich broth.


Ingredients

  • 4 salmon fillets
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced
  • 2 tomatoes, chopped
  • 1 carrot, sliced
  • 2 cups vegetable broth or water
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon thyme
  • 1 teaspoon allspice
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the sliced onion and minced garlic to the skillet, sautéing until softened and fragrant, about 3-4 minutes.
  3. Stir in the sliced bell pepper, chopped tomatoes, and sliced carrot. Cook for another 5 minutes.
  4. In a separate bowl, combine the vegetable broth, soy sauce, brown sugar, thyme, allspice, salt, and pepper. Pour into the skillet and gently add the salmon fillets. Cover and simmer for 15-20 minutes until salmon is cooked through.

Notes

For a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of water and stir it in during the final minutes of cooking.
