- 4 salmon fillets
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 bell pepper, sliced
- 2 tomatoes, chopped
- 1 carrot, sliced
- 2 cups vegetable broth or water
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon thyme
- 1 teaspoon allspice
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the sliced onion and minced garlic to the skillet, sautéing until softened and fragrant, about 3-4 minutes.
- Stir in the sliced bell pepper, chopped tomatoes, and sliced carrot. Cook for another 5 minutes.
- In a separate bowl, combine the vegetable broth, soy sauce, brown sugar, thyme, allspice, salt, and pepper. Pour into the skillet and gently add the salmon fillets. Cover and simmer for 15-20 minutes until salmon is cooked through.
Notes
For a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of water and stir it in during the final minutes of cooking.
