Instructions
- Wash the lemons thoroughly and slice them into thin rounds, about 1/8 inch thick.
- In a medium saucepan, combine the water and sugar over medium heat until the sugar is fully dissolved.
- Add the lemon slices to the syrup, ensuring they are fully submerged, and simmer gently for about 1 hour, occasionally flipping the slices with a fork.
- Remove the slices and place them on a cooling rack to dry. Optionally, coat them in sugar at this point.
Notes
Store in an airtight container at room temperature for up to two weeks. For better freshness, refrigerate but expect slight stickiness.
