  • 2 boneless, skinless chicken breasts
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat your grill or skillet over medium-high heat.
  2. Season the chicken breasts generously with salt, pepper, and a drizzle of olive oil.
  3. Place the seasoned chicken on the grill or skillet. Cook for about 6-7 minutes on each side, until fully cooked through and reaches an internal temperature of 165°F.
  4. While the chicken is cooking, prepare the avocado topping by combining avocado, cherry tomatoes, red onion, cilantro, lime juice, salt, and pepper in a bowl. Mix gently to combine and set aside.
