  • 1 lb shrimp, peeled and deveined
  • 1 lb salmon fillets
  • 2 tablespoons Cajun seasoning
  • 4 russet potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tablespoons Dijon mustard
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 lb fresh green beans
  • Red pepper flakes, optional

Instructions

  1. Start by boiling the peeled russet potatoes in a large pot of salted water until they are fork-tender, about 15-20 minutes. Drain and set aside.
  2. While the potatoes are cooking, season the shrimp and salmon with Cajun seasoning. Heat olive oil in a large skillet and sear the shrimp for about 2-3 minutes on each side until pink and opaque. Remove and set aside.
  3. Add more butter if needed and cook the salmon fillets for about 4-5 minutes per side until flaked easily with a fork. Set aside. In the same skillet, melt butter and sauté minced garlic until fragrant. Add heavy cream, chicken broth, Dijon mustard, salt, pepper, and smoked paprika. Simmer until thickened, about 5-7 minutes.
  4. Return the shrimp and salmon to the skillet with the sauce for a couple of minutes. Cook green beans in boiling water for 3-4 minutes until bright green and tender-crisp. Drain, sauté in butter with minced garlic, and add red pepper flakes if desired.

Notes

Feel free to adjust seasoning and add a splash of lemon juice for a flavor boost. Ensure potatoes are well-drained to avoid watery mash.
