- 1 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 large egg
- 2 large eggs (for brownie batter)
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 3/4 cup corn syrup
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
- Melt the unsalted butter and mix in the granulated sugar and 1/2 cup brown sugar until smooth. Beat in 2 eggs and 1 teaspoon vanilla extract.
- Sift in the flour, cocoa powder, and salt; stir until just combined without overmixing.
- Pour the batter into the prepared pan and bake for about 20 minutes.
- For the topping, combine the remaining 1/2 cup brown sugar, corn syrup, 1 egg, and a pinch of salt in a saucepan over medium heat. Stir until the mixture thickens.
- Remove from heat, stir in the remaining vanilla and pecans.
- Pour the pecan mixture over the partially baked brownie base and bake for an additional 20–25 minutes until set.
- Let cool completely before slicing into squares.
Notes
These brownies can be served warm or at room temperature, and pair well with vanilla ice cream or whipped cream.
