Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 large eggs (for brownie batter)
  • 2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 3/4 cup corn syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Melt the unsalted butter and mix in the granulated sugar and 1/2 cup brown sugar until smooth. Beat in 2 eggs and 1 teaspoon vanilla extract.
  3. Sift in the flour, cocoa powder, and salt; stir until just combined without overmixing.
  4. Pour the batter into the prepared pan and bake for about 20 minutes.
  5. For the topping, combine the remaining 1/2 cup brown sugar, corn syrup, 1 egg, and a pinch of salt in a saucepan over medium heat. Stir until the mixture thickens.
  6. Remove from heat, stir in the remaining vanilla and pecans.
  7. Pour the pecan mixture over the partially baked brownie base and bake for an additional 20–25 minutes until set.
  8. Let cool completely before slicing into squares.

Notes

These brownies can be served warm or at room temperature, and pair well with vanilla ice cream or whipped cream.
