Description

Quick and delicious Buffalo White Bean Tacos that are vegetarian-friendly and packed with flavor.


Ingredients

  • 2 cans white beans, drained and rinsed
  • 1/2 cup buffalo hot sauce
  • 8 small tortillas
  • 1 avocado, sliced
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 red onion, diced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Heat a medium skillet over medium heat and add the drained white beans.
  2. Pour in the hot sauce and stir to combine, cooking for about 5-7 minutes until heated through.
  3. Warm the tortillas in a separate skillet or microwave until soft and pliable.
  4. Assemble the tacos by placing a generous spoonful of the buffalo white bean mixture on each tortilla.
  5. Top with avocado slices, shredded lettuce, diced tomatoes, and red onion.
  6. Garnish with fresh cilantro and serve with lime wedges on the side.

Notes
