- 1 ½ cups shredded cooked chicken
- ⅓ cup buffalo wing sauce
- 2 ounces cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- ¼ cup ranch or blue cheese dressing
- 2 green onions, chopped
- 4 large flour tortillas
- 1 tablespoon butter or oil (for cooking)
Instructions
- In a bowl, mix shredded chicken, buffalo sauce, and cream cheese until smooth.
- Lay a tortilla flat on a clean surface. On one half, sprinkle a combination of mozzarella and cheddar cheese.
- Add a generous portion of the buffalo chicken mixture over the cheese. Drizzle with ranch or blue cheese dressing, then top with chopped green onions and a bit more cheese. Fold the tortilla in half to enclose the filling.
- Heat butter or oil in a skillet over medium heat. Cook the quesadilla for 2–3 minutes on each side until golden and crispy. Repeat this process with the remaining tortillas.
- Slice each quesadilla into wedges and serve hot for the best flavor experience.
Notes
Serve with additional ranch or blue cheese dressing for dipping. These are great as appetizers or main dishes.
