- 2 boneless, skinless chicken breasts
- 8 oz pasta (penne or your favorite type)
- 2 cups cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Cook the pasta according to package instructions. Once done, drain and set aside.
- Season the chicken with salt and pepper. Heat olive oil in a skillet over medium heat and add the chicken. Cook until golden brown, about 6-7 minutes on each side. Remove and let it rest before slicing.
- Add minced garlic to the skillet and sauté for 30 seconds. Then, add halved cherry tomatoes and cook until they soften, about 3-4 minutes.
- Stir in balsamic vinegar and fresh basil. Return sliced chicken and add cooked pasta. Toss together gently.
- Serve hot, garnished with grated Parmesan cheese.
