Description

A delightful dish bringing together the flavors of Italian bruschetta in a comforting pasta format with cherry tomatoes, basil, and marinated chicken.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz pasta (penne or your favorite type)
  • 2 cups cherry tomatoes, halved
  • 1/2 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Cook the pasta according to package instructions. Once done, drain and set aside.
  2. Season the chicken with salt and pepper. Heat olive oil in a skillet over medium heat and add the chicken. Cook until golden brown, about 6-7 minutes on each side. Remove and let it rest before slicing.
  3. Add minced garlic to the skillet and sauté for 30 seconds. Then, add halved cherry tomatoes and cook until they soften, about 3-4 minutes.
  4. Stir in balsamic vinegar and fresh basil. Return sliced chicken and add cooked pasta. Toss together gently.
  5. Serve hot, garnished with grated Parmesan cheese.
