Delicious blondies infused with the warm spices of gingerbread, perfect for fall and winter festivities.


Ingredients

  • 1 cup unsalted butter, at room temperature
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • Optional: 1/2 cup chopped nuts (walnuts or pecans)
  • Optional: 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Cream the unsalted butter and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then mix in the vanilla extract.
  4. In a separate bowl, whisk together flour, ginger, cinnamon, cloves, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet mixture and mix until just combined.
  6. If desired, fold in chopped nuts and chocolate chips.
  7. Spread the batter into the prepared baking pan and bake for 25-30 minutes.
  8. Allow to cool in the pan before cutting into bars.

Notes

Store in an airtight container at room temperature for up to 5 days or refrigerate for a week. Freeze for up to 3 months.
