Ingredients

  • 1 cup grated cheddar cheese
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk
  • 1/4 cup flour
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, sauté until the onion is translucent and fragrant.
  2. Stir in the flour and cook for 1 minute to create a roux.
  3. Gradually add the broth while whisking to avoid lumps. Bring to a gentle simmer, then add broccoli florets and cook for about 10 minutes, or until tender.
  4. Stir in the milk and grated cheddar cheese, cooking until the cheese is melted and soup is creamy. Season with salt and pepper to taste.
