Description

Ingredients

  • 1 cup bran flakes
  • 1 cup buttermilk
  • 1/2 cup honey
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it.
  2. In a large bowl, combine the bran flakes and buttermilk, and let it sit for about 10 minutes.
  3. In another bowl, whisk together the honey, eggs, and oil until well combined.
  4. Add the wet ingredients to the bran mixture and stir until just combined.
  5. In a separate bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, salt, and cinnamon.
  6. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  7. Fill the muffin cups about 2/3 full with the batter.
  8. Bake for about 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow to cool slightly before removing from the pan. Serve warm or at room temperature.

Notes

For extra flavor, consider adding nuts, berries, or chocolate chips. Store in an airtight container for up to 3 days or freeze for up to 3 months.
