Ingredients

  • 1 cup sugar
  • 1 large egg
  • ¼ cup milk
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup pastry cream or vanilla pudding for filling
  • ½ cup chocolate frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking sheet.
  2. Cream together the butter and sugar until light and fluffy. Beat in the egg, milk, and vanilla extract.
  3. Whisk together the flour, baking powder, and salt in a separate bowl. Gradually add to the wet mixture.
  4. Drop rounded tablespoons of dough onto the baking sheet, spaced 2 inches apart. Bake for 10-12 minutes until edges are golden.
  5. Cool completely on a wire rack before filling.
  6. Spread a layer of pastry cream on one cookie and sandwich with another cookie. Top with chocolate frosting.
