Instructions
- Preheat your oven to 350°F (175°C) and grease a baking sheet.
- Cream together the butter and sugar until light and fluffy. Beat in the egg, milk, and vanilla extract.
- Whisk together the flour, baking powder, and salt in a separate bowl. Gradually add to the wet mixture.
- Drop rounded tablespoons of dough onto the baking sheet, spaced 2 inches apart. Bake for 10-12 minutes until edges are golden.
- Cool completely on a wire rack before filling.
- Spread a layer of pastry cream on one cookie and sandwich with another cookie. Top with chocolate frosting.
