Description

Delightful blueberry muffins that are moist, fluffy, and perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • ¾ cup sugar
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup milk
  • ⅓ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups fresh blueberries

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, vegetable oil, eggs, and vanilla extract. Combine wet and dry ingredients, stirring gently until just mixed.
  4. Gently fold in the blueberries without crushing them.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
  7. Cool in the tin for a few minutes before transferring to a wire rack.

Notes

For extra flavor, toss blueberries in a little flour before folding into the batter or add lemon zest for a refreshing twist.
