Blueberry Lentil Bread


Description

A deliciously moist and nutritious bread combining the heartiness of lentils with the sweet burst of blueberries, perfect for breakfast or a healthy snack.


Ingredients

  • 1 cup cooked lentils
  • 1 cup blueberries (fresh or frozen)
  • 1 1/2 cups whole wheat flour
  • 1/2 cup almond meal
  • 1/4 cup honey or maple syrup
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the cooked lentils, blueberries, honey, applesauce, and vanilla extract.
  3. In another bowl, mix the whole wheat flour, almond meal, baking powder, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 40-50 minutes, or until a toothpick comes out clean.
  7. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For a vegan option, replace honey with maple syrup. Use all-purpose flour if desired, keeping in mind the texture may vary.
