- 1 sheet frozen puff pastry
- 4 oz cream cheese (room temperature)
- 3 tbsp white granulated sugar
- 1 tsp pure vanilla extract
- 1 cup blueberries (fresh or frozen)
- 1/3 cup white granulated sugar (for preserves)
- 1 large egg (for egg wash)
- 1/2 cup powdered sugar (for glaze)
- 1 tbsp milk
- Additional blueberries for glaze
Instructions
- Begin by preparing your filling. In a mixing bowl, combine the room temperature cream cheese, 3 tablespoons of sugar, and 1 teaspoon of vanilla extract. Mix until the mixture is smooth and creamy.
- Next, make the blueberry preserves. In a saucepan over medium heat, combine 1 cup of blueberries, 1/3 cup of sugar, and a small amount of water. Stir occasionally and cook until the mixture thickens slightly, about 5-7 minutes. Remove from heat and let it cool.
- Roll out the frozen puff pastry on a lightly floured surface. Cut the pastry into squares, roughly 4×4 inches. Place a spoonful of the cream cheese filling and a spoonful of blueberry preserves in the center of each pastry square. Fold the corners of the square to the center and pinch to seal, creating a little pocket.
- Prepare the egg wash by beating the egg and mixing it with water. Brush this mixture over the assembled danishes, giving them a beautiful golden color when baked. Bake in a preheated oven at 375°F (190°C) for about 20 minutes or until the pastries are puffed and golden brown. While they cool, whisk together powdered sugar, 1 tablespoon of milk, and any remaining blueberries to form a glaze, then drizzle it over the cooled pastries.
