Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- In a saucepan over medium heat, combine cranberries, granulated sugar, lemon juice, and vanilla extract. Cook until cranberries burst, about 5-7 minutes.
- In a mixing bowl, whisk together flour, rolled oats, brown sugar, baking powder, and salt. Stir in melted butter until crumbly.
- Press half of the oat mixture into the bottom of the dish, spread the cranberry mixture on top, and sprinkle the remaining oat crumble. Bake for 30-35 minutes until topping is golden brown. Cool completely before slicing.
