- 2 lbs beef chuck roast
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons Worcestershire sauce
- 2 tablespoons soy sauce
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Place the sliced onion and minced garlic at the bottom of the slow cooker.
- Season the beef chuck roast generously with salt and pepper, then place it on top of the onions.
- Mix together beef broth, diced tomatoes, Worcestershire sauce, soy sauce, and oregano, then pour over the beef.
- Cover and cook on low for 8 hours or on high for 4 hours until the beef is tender.
- Shred the beef with two forks and mix it back into the sauce.
- Serve hot, garnished with fresh parsley.
Notes
For a heartier meal, serve over mashed potatoes or rice, or use in sandwiches.
