Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine almond flour, coconut flour, sugar, salt, and baking soda; stir until well mixed.
- In another bowl, cream together softened butter, egg, and vanilla extract until smooth and creamy.
- Mix the dry ingredients into the wet mixture gradually until a dough forms.
- Scoop tablespoon-sized amounts of dough and place them on the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly.
- Bake in the preheated oven for 10-12 minutes until lightly golden.
- Allow the cookies to cool on a wire rack.
Notes
For a dairy-free option, substitute butter with coconut oil or a vegan alternative. You can also add chocolate chips or spices like cinnamon for variations.
