Ingredients

  • 1 cup cottage cheese
  • 1 cup oats
  • 1/2 cup almond flour
  • 1/4 cup honey (or maple syrup)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine cottage cheese, oats, almond flour, honey, vanilla extract, baking powder, and salt in a large mixing bowl. Mix until well combined into a thick dough.
  3. Fold in chocolate chips if desired. Drop spoonfuls of dough onto a parchment-lined baking sheet.
  4. Bake for 12-15 minutes until golden brown. Allow to cool on the baking sheet and then transfer to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to five days or refrigerate to extend shelf life to two weeks. They can also be frozen for up to three months.
