Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup powdered sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the granulated sugar, brown sugar, and vegetable oil. Mix until smooth. Add the eggs one at a time, mixing thoroughly after each addition. Stir in the vanilla extract.
  3. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt. Gradually add this dry mixture to the wet mixture, mixing until just combined.
  4. Cover the dough and refrigerate for at least 4 hours or overnight.
  5. Scoop tablespoon-sized amounts of dough and roll into balls.
  6. Roll each ball in powdered sugar until coated.
  7. Place on a lined baking sheet about 2 inches apart. Bake for 10-12 minutes or until puffed and cracked.
  8. Cool on the baking sheet for a few minutes before transferring to a wire rack.
