- 1/2 cup vegetable oil
- 1 cup buttermilk
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- Cream cheese frosting for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix together the all-purpose flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, combine the vegetable oil, buttermilk, eggs, and vanilla extract.
- Gradually mix the wet ingredients into the dry ingredients until just combined, then gently fold in the blueberries.
- Divide the batter between the prepared pans and bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring to wire racks to cool completely.
- Frost with cream cheese frosting before serving.

Serve at room temperature; pairs well with vanilla ice cream or whipped cream.
