A fun twist on classic meatloaf, these meatloaf bombs are filled with savory beef, crispy bacon, and gooey cheddar cheese, perfect for dinner or appetizers.

- 2 lbs ground beef
- 1 cup breadcrumbs
- 2 eggs
- 1/2 cup barbecue sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 8 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup barbecue sauce (for glazing)
Instructions
- Preheat your oven to 375°F.
- In a large bowl, combine the ground beef, breadcrumbs, eggs, 1/2 cup barbecue sauce, garlic powder, onion powder, salt, and pepper until well mixed.
- Take a small amount of the meat mixture and flatten it; add crumbled bacon and cheddar cheese in the center, then wrap the meat around the filling to form a ball. Repeat until all the mixture is used.
- Arrange the meatloaf bombs on a baking sheet lined with parchment paper and bake for 25-30 minutes. Brush with remaining barbecue sauce and bake for an additional 5 minutes.
Notes
Let the meatloaf bombs cool slightly after baking to help hold them together. They can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
