Description

A delightful twist on fried rice, combining fresh vegetables and a spicy chili sauce for a quick and easy meal.


Ingredients

  • 2 cups cooked rice
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 23 tablespoons soy sauce
  • 1 tablespoon chili sauce
  • 2 eggs
  • 2 green onions, sliced
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Heat oil in a large skillet over medium heat.
  2. Add chopped onions and minced garlic, sauté until translucent.
  3. Stir in mixed vegetables and cook for a few minutes.
  4. Push the vegetables to the side and crack the eggs into the skillet, scrambling them until cooked.
  5. Add the cooked rice, soy sauce, and chili sauce to the skillet, mixing everything together.
  6. Season with salt and pepper to taste.
  7. Garnish with sliced green onions and serve hot.

Notes

For extra flavor, serve with lime wedges or extra chili sauce on the side.
