Ingredients

- 2 cups cooked rice
- 1 cup mixed vegetables (peas, carrots, corn)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2–3 tablespoons soy sauce
- 1 tablespoon chili sauce
- 2 eggs
- 2 green onions, sliced
- Salt and pepper to taste
- Oil for frying
Instructions
- Heat oil in a large skillet over medium heat.
- Add chopped onions and minced garlic, sauté until translucent.
- Stir in mixed vegetables and cook for a few minutes.
- Push the vegetables to the side and crack the eggs into the skillet, scrambling them until cooked.
- Add the cooked rice, soy sauce, and chili sauce to the skillet, mixing everything together.
- Season with salt and pepper to taste.
- Garnish with sliced green onions and serve hot.
Notes
For extra flavor, serve with lime wedges or extra chili sauce on the side.
