Description

Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 beaten egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. Mash the ripe bananas in a mixing bowl until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the baking soda and a pinch of salt.
  5. Add sugar, beaten egg, and vanilla extract, stirring to combine.
  6. Mix in the flour until just incorporated.
  7. Pour the batter into the prepared muffin tin, filling each cup two-thirds full.
  8. Bake for 18-20 minutes, or until a toothpick comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack.

Notes

Store in an airtight container for up to 3 days or freeze for up to 3 months. Use very ripe bananas for maximum sweetness.
