Description

Delightful muffins combining ripe bananas with a crunchy crumb topping, perfect for breakfast or snacks.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1 teaspoon cinnamon
  • 1/2 cup brown sugar
  • 1/4 cup cold butter (for crumb topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, combine the mashed bananas and melted butter. Stir in the baking soda and a pinch of salt.
  3. Mix in the sugar, egg, and vanilla extract, then gradually add in the flour, mixing gently until just combined.
  4. In another bowl, mix oats, cinnamon, brown sugar, and flour for the crumb topping. Cut in the cold butter until it resembles coarse crumbs.
  5. Fill each muffin liner about 2/3 full with batter and sprinkle the crumb topping over each muffin. Bake for 18-20 minutes, or until a toothpick comes out clean.
  6. Allow the muffins to cool for a few minutes before transferring them to a wire rack.

Notes

For a healthier version, substitute half of the all-purpose flour with whole wheat flour. Customize with nuts or chocolate chips.
