- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 cup rolled oats
- 1 teaspoon cinnamon
- 1/2 cup brown sugar
- 1/4 cup cold butter (for crumb topping)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a mixing bowl, combine the mashed bananas and melted butter. Stir in the baking soda and a pinch of salt.
- Mix in the sugar, egg, and vanilla extract, then gradually add in the flour, mixing gently until just combined.
- In another bowl, mix oats, cinnamon, brown sugar, and flour for the crumb topping. Cut in the cold butter until it resembles coarse crumbs.
- Fill each muffin liner about 2/3 full with batter and sprinkle the crumb topping over each muffin. Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow the muffins to cool for a few minutes before transferring them to a wire rack.
Notes
For a healthier version, substitute half of the all-purpose flour with whole wheat flour. Customize with nuts or chocolate chips.
