- 2 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine the mashed bananas with melted butter until smooth. Mix in baking soda and a pinch of salt.
- Add sugar, beaten egg, and vanilla extract; stir until combined.
- Gently fold in flour and ground cinnamon until just combined.
- Spoon the batter into greased muffin tins, filling nearly to the top.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes in the pan before transferring to a wire rack.
Notes
Best enjoyed warm or at room temperature. Can be served with butter or honey.
