Description

Ingredients

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed bananas with melted butter until smooth. Mix in baking soda and a pinch of salt.
  3. Add sugar, beaten egg, and vanilla extract; stir until combined.
  4. Gently fold in flour and ground cinnamon until just combined.
  5. Spoon the batter into greased muffin tins, filling nearly to the top.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Let cool for a few minutes in the pan before transferring to a wire rack.
