Ingredients

- 3 ripe bananas
- 1/3 cup melted butter
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- pinch of salt
- 1 1/2 cups all-purpose flour
- 1 cup chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Grease or line a muffin tin.
- Mash the ripe bananas with a fork until smooth. Stir in the melted butter and sugar.
- Add the egg and vanilla extract, mixing until combined. Sprinkle in the baking soda and salt.
- Gradually add the flour, stirring gently, then fold in the chocolate chips.
- Pour the batter into the muffin tin, filling each cup 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before enjoying!
Notes
Serve warm or with a smear of butter. Store in an airtight container for up to 3 days or freeze for up to 3 months.
