Description

Soft, fluffy muffins bursting with flavor from ripe bananas and gooey chocolate chips. Perfect for breakfast or a snack.


Ingredients

  • 3 ripe bananas
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line a muffin tin.
  2. Mash the ripe bananas with a fork until smooth. Stir in the melted butter and sugar.
  3. Add the egg and vanilla extract, mixing until combined. Sprinkle in the baking soda and salt.
  4. Gradually add the flour, stirring gently, then fold in the chocolate chips.
  5. Pour the batter into the muffin tin, filling each cup 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let cool before enjoying!

Notes

Serve warm or with a smear of butter. Store in an airtight container for up to 3 days or freeze for up to 3 months.
