Ingredients

  • 1/2 cup melted butter
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. Mash the ripe bananas with a fork until smooth and mix in the melted butter.
  3. Add sugar, beaten egg, and vanilla extract; stir to combine.
  4. Mix in baking soda and salt, then add flour and stir until just combined.
  5. Pour the batter into the muffin tin, filling each cup 2/3 full. Bake for 18-20 minutes or until a toothpick comes out clean.
  6. Let the muffins cool in the tin for a few minutes before transferring to a wire rack to cool completely.
