- 4 boneless, skinless chicken breasts
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 cups fresh spinach
- 1 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, combine the balsamic vinegar, olive oil, minced garlic, oregano, salt, and pepper. Stir well to create a flavorful marinade for the chicken.
- Place the chicken breasts in a baking dish and pour the balsamic mixture over them, ensuring they are well-coated. Bake the chicken in the preheated oven for 20 minutes.
- Sauté the spinach and cherry tomatoes in a pan over medium heat for about 3-4 minutes until the spinach is wilted and the tomatoes are softened.
- Remove the chicken from the oven and top each piece with the sautéed spinach and tomatoes. Return the dish to the oven and bake for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C). Optionally, sprinkle Parmesan cheese over the chicken before serving.
Notes
For extra flavor, marinate the chicken for 1-2 hours. Feel free to swap out vegetables; zucchini or bell peppers also work well.
