Ingredients

  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/4 cup melted butter (for streusel)
  • 1/2 cup flour (for streusel)
  • 1 tablespoon cinnamon (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together grated zucchini, vegetable oil, sugar, eggs, and vanilla extract.
  3. In another bowl, whisk together all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.
  4. Gradually add the dry ingredients to the zucchini mixture; stir until just combined.
  5. For the streusel, mix brown sugar, 1/4 cup flour, and 1 tablespoon cinnamon. Stir in melted butter until crumbly.
  6. Pour half of the zucchini batter into the prepared loaf pan. Sprinkle half of the streusel topping; pour remaining batter and finish with the rest of the streusel topping.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best results, pat the grated zucchini dry to avoid moisture. Consider adding chocolate chips or dried fruits for variations.
