Instructions
- Preheat the oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix together grated zucchini, vegetable oil, sugar, eggs, and vanilla extract.
- In another bowl, whisk together all-purpose flour, baking powder, baking soda, ground cinnamon, and salt.
- Gradually add the dry ingredients to the zucchini mixture; stir until just combined.
- For the streusel, mix brown sugar, 1/4 cup flour, and 1 tablespoon cinnamon. Stir in melted butter until crumbly.
- Pour half of the zucchini batter into the prepared loaf pan. Sprinkle half of the streusel topping; pour remaining batter and finish with the rest of the streusel topping.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For best results, pat the grated zucchini dry to avoid moisture. Consider adding chocolate chips or dried fruits for variations.
