Ingredients

  • 2 large onions, thinly sliced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 4 cups beef or vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 cup gruyère cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Melt butter and olive oil over medium heat; add sliced onions and caramelize for 20-25 minutes.
  3. Add minced garlic, pour in broth, and sprinkle thyme; simmer for 5 minutes.
  4. Cook gnocchi until they float, drain, and combine with onion mixture.
  5. Transfer to a baking dish, top with cheese, and bake for 20 minutes until bubbly and golden.
  6. Garnish with fresh parsley and serve hot.

Notes
