A delicious and quick baked cod dish infused with lemon and garlic, perfect for weeknight dinners or special gatherings.


Ingredients

  • 1.5 lb cod fillet pieces
  • 1/4 cup chopped fresh parsley
  • 5 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil
  • 5 garlic cloves, minced
  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Pat the cod fillet pieces dry with paper towels.
  2. Mix together the fresh lemon juice, olive oil, and melted butter in a bowl. In another bowl, combine the all-purpose flour with ground coriander, sweet paprika, cumin, salt, and black pepper.
  3. Dip each piece of cod into the lemon sauce, then coat it in the flour mixture. Heat a tablespoon of olive oil in a skillet and sear the cod pieces for about two minutes on each side until golden brown.
  4. Mix the minced garlic into the reserved lemon sauce and drizzle it over the seared cod. Transfer everything to the oven and bake for about 10 minutes, until the cod flakes easily with a fork.

Notes

Serve garnished with chopped fresh parsley. This dish can be paired with steamed vegetables, roasted potatoes, or a refreshing salad.
