Description

Delightful baked chicken quesadillas filled with tender shredded chicken, cheese, and colorful veggies, perfect for any meal or snack.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup bell peppers, diced
  • 1/2 cup onions, diced
  • 1 teaspoon taco seasoning
  • 4 large flour tortillas
  • Cooking spray or olive oil
  • Sour cream and salsa for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the shredded chicken, cheese, diced bell peppers, onions, and taco seasoning. Mix thoroughly.
  3. Lay a tortilla flat, spoon the chicken mixture onto one half, and fold the other half over.
  4. Lightly spray a baking sheet with cooking spray. Place the quesadillas on the baking sheet and bake for 15-20 minutes until golden brown and crispy.
  5. Remove from the oven, let cool for a few minutes, and slice into wedges before serving.

Notes

For extra flavor, marinate the chicken in taco seasoning before cooking. Feel free to customize the fillings!
