- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup bell peppers, diced
- 1/2 cup onions, diced
- 1 teaspoon taco seasoning
- 4 large flour tortillas
- Cooking spray or olive oil
- Sour cream and salsa for serving
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the shredded chicken, cheese, diced bell peppers, onions, and taco seasoning. Mix thoroughly.
- Lay a tortilla flat, spoon the chicken mixture onto one half, and fold the other half over.
- Lightly spray a baking sheet with cooking spray. Place the quesadillas on the baking sheet and bake for 15-20 minutes until golden brown and crispy.
- Remove from the oven, let cool for a few minutes, and slice into wedges before serving.
Notes
For extra flavor, marinate the chicken in taco seasoning before cooking. Feel free to customize the fillings!
