Baked Broccoli Cheese Balls

Description

Crispy on the outside and gooey on the inside, these Baked Broccoli Cheese Balls are a delicious way to enjoy veggies without sacrificing flavor.


Ingredients

  • 2 cups broccoli florets, steamed
  • 1 cup breadcrumbs
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Steam the broccoli for 3-5 minutes until tender-crisp. Allow to cool and chop finely.
  2. Combine the chopped broccoli, breadcrumbs, cheddar, Parmesan, eggs, flour, garlic powder, onion powder, salt and pepper in a bowl. Mix until cohesive.
  3. Roll the mixture into 1-inch balls and place them on a greased baking sheet.
  4. Bake for 20-25 minutes until golden brown; optionally broil for the last minute for extra crispiness.

Notes

Serve warm with marinara sauce or ranch dip. Store leftovers in the refrigerator for up to 3 days.
