Description

A delightful dish combining creamy ranch dressing with crunchy bacon, fresh vegetables, and pasta, perfect for gatherings and potlucks.


Ingredients

  • 8 oz pasta (spiral or macaroni)
  • 1/2 cup cooked bacon, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the cooled pasta, crumbled bacon, cherry tomatoes, diced cucumber, red onion, and shredded cheddar cheese.
  3. Pour the ranch dressing over the salad and toss to coat all ingredients evenly.
  4. Season with salt and pepper to taste, garnish with chopped parsley if desired, then serve chilled.

Notes

For a vegetarian version, omit the bacon and consider adding more veggies or chickpeas for protein.
