Bacon and Cheese Potato Skins

Description

Deliciously crispy bacon and cheese loaded potato skins, perfect for appetizers or snacks.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • Olive oil
  • Salt
  • Pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes and prick them with a fork.
  3. Rub the potatoes with olive oil, salt, and pepper.
  4. Bake the potatoes for about 45-60 minutes until tender.
  5. Once cool enough to handle, cut each potato in half lengthwise and scoop out some flesh, leaving a thin layer of potato.
  6. Brush the insides with olive oil and sprinkle with salt and pepper.
  7. Fill each potato skin with crumbled bacon and shredded cheese.
  8. Return the filled potato skins to the oven and bake until the cheese is melted and bubbly, about 10-15 minutes.
  9. Remove from the oven and top with sour cream and chopped green onions before serving.

Notes

For extra flavor, experiment with different types of cheese and toppings like jalapeños or tomatoes.
