Ingredients

  • 1 large ripe avocado, peeled and pitted
  • 1 cup cottage cheese (preferably full-fat)
  • 2 tablespoons fresh lemon juice
  • 1 small garlic clove, minced
  • 2 tablespoons fresh chives, finely chopped
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon sea salt, or to taste
  • 1/4 teaspoon crushed red pepper flakes
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Place the avocado, cottage cheese, lemon juice, and minced garlic into a food processor or blender.
  2. Process the mixture until completely smooth and creamy, scraping down the sides as necessary.
  3. Add the fresh chives, black pepper, and sea salt, then pulse briefly to incorporate evenly.
  4. Taste and adjust seasoning by adding more lemon juice or salt if preferred. For a spicier variation, blend in crushed red pepper flakes. For additional richness, drizzle in olive oil and blend again. Transfer to a serving bowl and garnish with extra chives or a drizzle of olive oil if desired.
