  • 2 ripe avocados
  • 1 cup flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 eggs
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Mash the avocados until smooth in a bowl.
  3. In a separate bowl, whisk together flour, sugar, baking powder, baking soda, and salt until well combined, then mix in the eggs, melted butter, and vanilla extract with the mashed avocados.
  4. Gradually add the dry ingredients to the wet ingredients and stir until just combined; gently fold in nuts if using. Pour the batter into the prepared loaf pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Allow cooling before slicing.

Notes

Ensure avocados are ripe for the best flavor. Store in an airtight container at room temperature for up to three days or freeze for up to three months.
