- 1 cup grated zucchini
- 1 cup grated apple
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon

- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 3 large eggs
- 1 teaspoon vanilla extract

- 1/4 cup butter, softened
- 2 tablespoons milk
- 1 teaspoon vanilla extract (for frosting)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- In a medium bowl, mix together the all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- In a large bowl, beat together the granulated sugar, brown sugar, and vegetable oil until well combined. Add the eggs and vanilla extract, mixing until smooth. Stir in the grated zucchini and apple.
- Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. If using nuts, fold them in gently.
- Pour the batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted into the center comes out clean.
- While the bread cools, prepare the frosting by creaming together the brown sugar and softened butter, adding milk and vanilla extract until smooth. Spread the frosting over the cooled bread.
Notes
Use freshly grated zucchini and apple for best results. Store in an airtight container for up to three days.
