  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1/2 teaspoon salt
  • 2 cups peeled and diced apples
  • 1 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth and fluffy. Beat in the eggs and vanilla extract until well blended.
  3. In another bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined. Fold in the apples and nuts, if using.
  4. Drop rounded scoops of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 12-15 minutes or until the edges are golden brown. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For better texture, ensure butter is softened but not melted. Use a mix of tart and sweet apples for added flavor. Adjust cinnamon to personal taste. For chewy cookies, slightly underbake them.
