Description

Apple Fritter Muffins combine the deliciousness of classic apple fritters with the comforting texture of muffins, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup packed brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup melted unsalted butter
  • 1 teaspoon vanilla extract
  • 2 cups diced apples (mix of Granny Smith and Honeycrisp)
  • 1 cup powdered sugar (for glaze)
  • 1 tablespoon whole milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a 12-cup muffin tin.
  2. In a large mixing bowl, whisk together the flour, brown sugar, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the eggs, milk, butter, and vanilla extract. Pour the wet mixture into the dry ingredients.
  4. Gently fold the wet and dry ingredients together until just combined, then fold in the diced apples.
  5. Spoon the batter into the muffin tin, filling each cup about two-thirds full. Bake for 20 to 25 minutes or until a toothpick comes out clean.
  6. Cool in the pan for 5 minutes before transferring to a wire rack. For the glaze, mix powdered sugar with milk until smooth and drizzle over cooled muffins.

Notes

Store muffins in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat in microwave before serving.
