- 1 cup packed brown sugar
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon

- 2 large eggs
- 1 cup whole milk
- 1/2 cup melted unsalted butter
- 1 teaspoon vanilla extract
- 2 cups diced apples (mix of Granny Smith and Honeycrisp)
- 1 cup powdered sugar (for glaze)
- 1 tablespoon whole milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and grease or line a 12-cup muffin tin.
- In a large mixing bowl, whisk together the flour, brown sugar, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the eggs, milk, butter, and vanilla extract. Pour the wet mixture into the dry ingredients.
- Gently fold the wet and dry ingredients together until just combined, then fold in the diced apples.
- Spoon the batter into the muffin tin, filling each cup about two-thirds full. Bake for 20 to 25 minutes or until a toothpick comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack. For the glaze, mix powdered sugar with milk until smooth and drizzle over cooled muffins.
Notes
Store muffins in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat in microwave before serving.
