Ingredients

  • 2 cups cottage cheese
  • 1 cup rolled oats
  • 2 apples, peeled and diced
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cottage cheese, rolled oats, diced apples, brown sugar, cinnamon, and vanilla extract.
  3. In another bowl, whisk together the eggs and milk.
  4. Pour the egg mixture into the cottage cheese mixture and stir until well combined. Fold in the chopped walnuts or pecans if using.
  5. Pour the mixture into a greased baking dish and spread evenly. Bake for about 30-35 minutes, or until the top is golden and set.
  6. Allow to cool slightly before serving.

Notes
