- 2 cups cottage cheese
- 1 cup rolled oats
- 2 apples, peeled and diced
- 1/2 cup brown sugar
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 2 eggs
- 1/4 cup milk
- 1/4 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the cottage cheese, rolled oats, diced apples, brown sugar, cinnamon, and vanilla extract.
- In another bowl, whisk together the eggs and milk.
- Pour the egg mixture into the cottage cheese mixture and stir until well combined. Fold in the chopped walnuts or pecans if using.
- Pour the mixture into a greased baking dish and spread evenly. Bake for about 30-35 minutes, or until the top is golden and set.
- Allow to cool slightly before serving.
Notes
Serve warm with a dollop of yogurt or honey. Store leftovers in an airtight container in the fridge for up to 3 days.
